Wahoo Ceviche

1 pound of wahoo, cut into ¼ diced pieces
1/3 cup of lime juice
3 tablespoons or orange juice
3 tablespoons of pineapple juice
1-1/2 tablespoons of finely diced Serrano peppers
2 tablespoons of finely dices yellow bell pepper
2 tablespoons of finely diced red bell pepper
1-1/2 tablespoons of minced red onion
1 teaspoon of minced garlic
2 tablespoons of minced fresh cilantro
1 tablespoon of extra virgin olive oil
½ teaspoon of salt

Plantain chips and lime wedges for serving
Place the diced fish into a glass dish and add all the juices listed above. Add all the onions, peppers and garlic and toss to coat the fish. Cover and refrigerate for 3-4 hours stirring occasionally.
Add the cilantro, salt and olive oil and stir in gently.
Serve with chips and lime slices.
