Cobia: Parmesan Encrusted

  • 2 pounds cobia
  • 1 cup melted butter
  • 2 cups panko breadcrumbs
  • 2 cups grated parmesan cheese
  • 2 teaspoons garlic salt

Dredge the fish in the melted butter. In a bowl combine remaining ingredients and cover the fish with the crumb mixture. Bake at 375 degrees on a well oiled baking pan for 20 minutes.
